School’s out, holidays are in full swing, and I’ve been feeling all the summer nostalgia — think climbing apricot trees at my grandparents’ farmhouse and big salad lunches with sun-warmed tomatoes and cucumbers straight from the garden. It made me think… summer can be such a joyful time to eat well without really trying.
Blushing apricots - loving summer!
This week's picks:
I finally went for a swim (first in months!) and wow… my lungs were not ready 😅. If you’ve got tips for building back breathing strength, I’m all ears.
We’re hosting a little garden BBQ next Sunday and I’m already thinking about what to throw on the grill.
Still dreaming about the Al pastor tacos I made last summer: slow-cooked pork finished on the BBQ, served with a zingy pineapple salsa. A labor of love, but 100% worth it. Although I might stick with my buttermilk chicken burgers or smash burger tacos. Watch this space 😜.
My daughter Iggi will probably make her signature tiramisu (ridiculously good), and I might bake my mum’s fluffy apricot cake: it’s pillowy, fruity, and somehow always disappears first.
Cherry Chocolate Skyr Bowl
If you have run out of ideas for a summer mid-morning snack, make this Black Forest skyr bowl of dreams with juicy English cherries. These days, I can pick my own from our local Fiveways farm orchards. Funny to think when I first came to England over 20 something years ago, you’d never see cherries like this. Now I eat them by the handful.
🍑And get ready for the apricots (and peaches) season, I always like to make something simple: my apricot galette(which you can also make with peaches). Flaky, golden pastry, soft fruit and just the right amount of messiness. Summer baking doesn’t need to be fancy.
