I love January though, it feels like a reset in many ways and it allows some breathing space for my thoughts and lifestyle before the rest of the year rushes in. This year I have three things that I am precious about:
Keeping the good habits of movement by sticking to my walks, dance, yoga and Pilates sessions every week.
Improving my wholegrain sourdough recipes so I can share them with you!
Create more recipes that feature at least 7 plants and are so good for your gut health so I can share them with you!
If you want a simple dinner idea where you can cram at least 7️⃣plants, may I suggest that you toss some wedges or potato chips, cubed butternut squash in olive oil, garlic🧄, paprika and crushed chili🌶️then airfry them. Then make an omelette with mushrooms, adding plenty of black pepper, snipping rosemary, and crumbling some feta cheese. I used my favorite julienne peeler to make a winter slaw from celeriac, carrots, red cabbage, and apple, smothered in a yogurt lemon and mustard dressing. Because I cannot quite get myself to eat salads and there are so many root vegetables in season!
