Weekends are made for baking. I love the rhythm of it: a sourdough loaf for the week ahead, a relaxed chicken soup simmering away for dinner, and that first proper dunk of warm bread into broth that feels like a soul reset. I do need it, especially because my sleep patterns are not very disciplined (tut-tut),

And here’s the best part: once the loaf is done, don’t toss that sourdough discard. Fold it into these soft apple sourdough muffins instead, the kind that get happily adopted as mid-morning breaks all week long.

New recipe #1: Clear chicken soup

Light but still comforting, with that clean, savory broth you want when winter is doing the most. Make it once, and you’ve got chicken and veg on the side too for another meal.

New recipe #2: Apple sourdough muffins

Soft, gently spiced, and packed with pockets of baked apple. Such a practical way to use up sourdough discard, especially if you like a sweet snack (that's better for you) with a cup of tea or coffee between meetings during the week.
