Resurrect those Leftovers!

I love our family's Easter traditions, but they are such heavy work, so I keep the most fun ones: dyeing hard boiled eggs in bright colors is a little bit like meal prep. Because I can turn them into a creamy egg salad for quick breakfasts or during the week. Or these light deviled eggs bites, they are such a classic.

Sometimes the best meals come from what’s already in the fridge. And we always end up with so many leftovers after celebrations, but fear not, they never get wasted.

Although this year was lighter in the amount of dishes we made (our son went skiing for the Easter weekend), Iggi (our daughter) came home and we baked and roasted to our hearts content.

This year, we did a Greek-style roast and the highlight were these "lemonates" potatoes (slow roasted in cast iron with loads of garlic, lemon, and fresh oregano). They make the best leftovers for your gut, since potatoes that have been cooked and cooled develop that lovely resistant starch (acting like fibre) that feed our good gut bacteria. I have to say, the flavors the next day are just insane! We'll probably turn them into our trusty potatoes and spring onion salad, which is filling enough for lunches, but even for a light dinner or alongside leftover lamb roast slices.

Traditions (and hot cross buns!)

Iggi baked a burnt cheesecake, not traditional for us, but it may well become one because it is just so good, and I made hot cross buns. I usually bake cozonac, our Romanian panettone, which takes hours, so this year I was clearly in the mood to make life easier.

The buns though, I think may have become my hubby Dave's new obsession. And if you're into sourdough baking, let me know if you'd like the recipe (it's not on the website yet).
