So I give you a spelt bread with millet and quinoa seeds (these are all ancient grains) to make a nutrient-packed loaf in two and a half hours, perfect even if you are a beginner baker. You don’t need a sourdough starter —just simple cupboard ingredients for a delicious, wholesome bread.
And what better to dunk this bread in then a spring time bright and fresh pea and basil soup that is everything you want to shake out the cold weather cobwebs.
Speaking of easy, it's true that I am not a fan of store bought bread, but I have found some clean label piadinas (they are Italian flatbreads) in the supermarket and they can really make dinner time so much faster. Even though I love cooking so much, I don't love lengthy, complicated dishes. Enter piadina pizza, that is so much better for you, with a quick homemade tomato sauce and beautifully fragrant basil.
