Cut to reality Flossie! There use to be a time in my younger years where I was robotically packing a ham and cheese sandwich and maybe a little lettuce for our family lunches. Because, boy, life was busy 🤷♀️! Life is still busy, but our lunch boxes are now bringing us joy and a healthy gut!
Reinvented Salad Niçoise
💪So, I started to build better habits and so can you! I often pack lunch boxes with leftovers. If not leftover dinners, then I start layering these reinvented salads, just using what's in the fridge, pantry or any odds and sods that I stash in Tupperware like a good Eastern European woman that hates food being wasted! I never really know what I end up with, but like this tuna salad, it was a can of tuna chunks, a little bit of cooked wholegrain rice, rocket and chicory leaves, a handful of herbs (dill and thyme), mixed with a little yogurt dressing from my other grain salad and then add some just set boiled eggs for a high protein and fiber lunch that even Dave will love😀! And if you are celebrating Easter, I really think you would love this Easter brunch idea, so colorful, packing tons of protein but lots of plant fiber too! You can easily make these yummy bowls all spring and not get bored of them! Skip the meat if you fancy!
Speaking of Easter, I am like a baking machine right now! Traditionally, my mum bakes cozonac (think panettone, but his rustic cousin 😄), which is so rewarding, soft and golden, stuffed with a cocoa cream or Turkish delight, truly aspirational! I won't show you my past cozonac attempts, they are laughable 🤣! I did, however, found success with these raspberry glazed brioche buns, they are sensational, if I do say so myself. But
