If you like us are relishing the slower pace of an empty nest or maybe you are pre-kids (enjoy it while it lasts), this cottage pie is just right for a cozy date night or a relaxed evening together. Just rich, savory beef filling topped with creamy mashed potatoes and melted cheese. Yum!

🌞We’ve had actual sunshine in the East of England this week, and the daffodils in our garden look like they’re about to take over. I can feel that shift happening, not quite spring, not quite winter, just that in-between stretch where you still want comfort but you also want something a bit brighter.

So here’s what I’m cooking right now.

Air Fryer Cabbage Wedges with Parmesan

These sweeet savory crisp edges, tender middle cabbage wedges, are my “cozy season is ending but I still want something warm” dinner - loads of flavor, and very little effort. They make the perfect side dish too, packed with fibre and a great way to turn a humble cabbage into something genuinely craveable. Plus they are somehow trendy this year 🤷‍♀️?

One last cozy dinner: Dave’s Cheesy Cottage Pie

Although, I have really loved these winter months with some sort of gentle presence, enjoying each day whether frosty and bright or drizzly and dreary. I hear you! You had enough of soups and stews, but maybe just once more, watch the Youtube video and I think you will love Dave's cottage pie! It's a proper Sunday situation.

A little spring sweetness: Rhubarb & Banana Muffins

But as a sign that spring is around the corner, out pops the forced Rhubarb and I just cannot help but make a batch of rhubarb muffins (or two) 😜! These muffins are tangy-sweet, soft, and perfect with a cup of tea.
