Hallelujah, I Still Have Leftovers!

This Easter brought all the good things: family, flavor, and a fridge full of leftovers that made this week’s meals a breeze. I’ve been leaning into layering and fusing cuisines to make new meals from that Easter feast! Here’s a little roundup of what I’ve been cooking, sharing, and savoring lately.

🥘Sometimes the best dinners come from what’s already in the fridge. And we had so many leftovers (mainly because my son was unable to make it 🥲)! So Wednesday evening I turned roast chicken into a 20-minute pasta with homemade arugula-walnut pesto, a dollop of whipped feta, and a sprinkle of toasted pine nuts—quick, creamy, and wildly satisfying. We had a massive leg of lamb that had its moment too: first in a loaded olive ciabatta sandwich with hummus and baba ganoush, and then all sliced up and stashed in the freezer for a quick curry when I really don't feel like cooking. Let alone all of the roast or grilled veg we made: asparagus, corn on the cob, baby potatoes, Harissa roast parsnips, a pea puree and tons of herbs adorning each of the dishes. And if you ever have leftover asparagus, don't toss it out, toss it in a zingy salad!

Traditions (and a Tart!)

Our daughter Iggi baked the most beautiful rhubarb frangipane tart—tangy, sweet, and just the right kind of indulgent.

I love our family's Easter traditions, but they are such heavy work, so I keep the most fun ones: dyeing hard boiled eggs in bright colors is a little bit like meal prep. Because I can turn them into a creamy egg salad for quick breakfasts during the week. It’s those little rituals that make the season feel meaningful.

🌿 Something New & a Spring Bite to Try !

I finally posted my recipe for fermented radishes (they're bright, crunchy, and gut-loving!), and were just in time for a gorgeous Easter brunch dish. I made puff pastry canapés with whipped feta and chives, radishes, and dill fronds—so simple, so pretty, and gone in minutes. If you haven’t tried fermenting at home yet, this is a beginner-friendly lacto-fermentation recipe you can make in minutes and keeps in the fridge for weeks 🩷 !
