A Toast to Summer Starts

🤔I wonder if we're going to see any signs of summer soon, after the cloudiest week in May.

🌦️ Yeah, it's Britain after all, we love talking about weather.


🌞This week I have definitely shifted gears to summer menus, and I’ve got some absolute gems to share with you. Think golden halloumi, creamy avocado, and a burger that deserves a standing ovation 👏.

So if you’re easing into summer meals or prepping for Memorial Day, there’s something in here that’ll make your taste buds do a happy dance.

Let’s start with a stunner: sweet potato and halloumi salad. Caramelized edges, salty-crispy bites, and a tangy dressing that ties it all together. A little sweet, a little savory, and very much in the “make again” category. Bonus? It helps tick off a few more plants toward your 30-a-week goal.

What have your mornings been like lately? Mine have been powered by avocado toast with cottage cheese, all layered over my homemade wholewheat sourdough (yes, I bake my own, and yes, it’s worth it, I'll show you one day). It’s ridiculously simple but feels like a café breakfast – protein, fiber, and creamy-good fats, all in one glorious bite.

Memorial Day is nearly here, and I’ve got just the right thing to grill if you are getting ready to celebrate: my buttermilk chicken burger with avocado dressing. I usually throw a pile of grilled veggies and oven fries too. It’s BBQ-friendly, gut-friendly, and definitely crowd-approved.

Speaking of crowd-approved, if you’ve got strawberries staring at you from the fridge, make my French strawberry cake. It’s light, juicy and fancy, and I swear it tastes like your best summer memory.

This French strawberry cake spells the start of the English summer for me. No other strawberries will do, as I wait patiently until English strawberries make their presence in the farm shops.

I’ve been testing a roasted red pepper pasta – creamy, smoky, and cramming even more plants. It might be one of my favorite pasta dinners yet. Fingers crossed it makes the blog soon, because I think you’re going to love it.
