🎂 Let Them Eat (Apricot) Cake… and Tacos

Summer plates, sweet treats & a question for you

It’s been one of those weeks where the kitchen feels extra full - with baking far too much sourdough, celebrations, and even a basket of apples from my French neighbor (perks of our dog walking group!).

Here’s what’s been happening and a few ideas for your table too that will keep your gut happy without trying.

🌮Smashed Burger Tacos
This is my summer's favorite recipe and is finally live on the blog! Juicy, smoky, slightly messy — and exactly what your weekend needs. These are taco-night but make it gut-loving, with a sneaky half tin of black beans folded into the mix.

Salmon, Peas & Prawns Pasta 🍝
Remember that salmon and peas pasta I posted a while ago? This week I made it with leftover black sesame crusted salmon flaked straight into a creamy lemon–miso pasta with shrimp and loads of peas (because they’re sweet, fiber-rich, and the backbone of this dish — not a garnish).

Cake Time 🎂
Dave’s birthday is just around the corner, and he’s put in his birthday cake request: apricot cake (mum's recipe)! I’m probably going to double-batch it as a traybake so he can take slices to work. And with all the cooking apples gifted to me, I remembered this moist Venetian apple cake crammed full of juicy soft apples and topped with cinnamon sugar. Iggi and I found the recipe in a Traveller National Geographic magazine and she had to make it! I will try making it this year, but failing that, you can always try these elegant apple tartlets. I love their streusel toppings and of course to have them next to generous scoops of vanilla ice cream.

Your Turn:
What would you do with a mountain of cooking apples? I’d love your ideas (bonus points if they sneak in some extra plants for that 30-a-week goal). Or just reply with what you'd like to see me making!

💌 I READ EVERY EMAIL!

See you next week !
