We got back from Portugal and thanks to a very delayed flight, I had plenty of time to notice there wasn't a vegetable in sight anywhere in the terminal. Unless you count the wilted lettuce leaves in the unending rows of dry overpriced sandwiches.
Now we're home, and summer's clearly winding down whether I'm ready or not.

And I'm looking to layer in more veg, more fibre, more color, and this week that's meant corn, beans and a seasonal fruit dessert.
Back to School, Back to Weeknights
These are my "back to school" or just ease you back into routine dinners:
I've been looking forward to making this Corn Chowder again, not least because I need some comfort to ease me from the familiar rainy weather as soon as we landed (it's Britain after all).
Apple and Blackberry Crumble - this time of the year I'd be picking blackberries on our walks with Nala, but this year's drought scorched most of the hedgerows near us and what's out there seems to have ripened and gone early. Might end up being a store-bought punnet this time.
