Pairing peas with mint is a thing! See what I did here 😜: almost rhymed! As it happens, I seem to have a few green food ideas for when you want to refresh your menu to match all the vibrant green that surrounds us in May 💚.


Peas are such a treasure: you can throw them in soups, make them in a puree or just toss them through a pasta dish to raise that number to 30 plants a week! They have a decent amount of protein and are fiber too, so definitely don't dismiss them when it comes to your gut health menu.

And if you’re craving something light, or refreshingly bright, I’ve got a trio of green delights that are mint to be on your plate.

Take my pea and ham soup and make it yours, by swapping the ham with crispy bacon bits or just skip it altogether by sprinkling parmesan and hemp seeds to get those savory flavors going.

And don't miss this broad bean salad, you literally have three ingredients and a zesty dressing to refresh and lighten up your lunchtime!

Then there's this minted pea puree that I keep making time and time again, mainly to pair with salmon. But I often just add leftovers to salads or dollop on grain bowls. Heck, you can also spread it on toast for breakfast, I know I've done it once or twice—it’s bright, fresh, and done in minutes.

Speaking of breakfast, my apple and rhubarb muffins recipe is finally on the blog, we must have been eating and sharing a dozen batches already! All in the name of testing a good recipe 😜! Let me know if you make it, I crammed nearly half a kilo of fruit in these muffins 🤯!
