Well, this week flew by – much like my garden radishes, which seemed to go from seed to spicy snack overnight 🌱. Between testing new recipes, making use of leftovers, and whipping up an unexpectedly elegant breakfast, I’ve got plenty of flavor-packed inspiration for you to help with those gut-loving 30 plants a week goals.

🌞We are well into June, and my meals are catching that sunshine energy.
But it wouldn't be a waste-not Candyflosslife mindset if not for leftovers done right – I shared this speedy fridge-find lunch on Instagram and you loved it. It’s proof that even a half-forgotten grilled corn-on-the-cob can become something yummy with the right combo (and maybe turn it into breakfast with a fried egg on top?). Finally: a pasta that tastes like summer. With homemade pesto using rocket (arugula) and walnuts to keep it on budget and stirred in a whole tub of ricotta for a sauce that’s both bright and creamy. 💪And to boost the protein content! It clings to the bow shaped pasta just right, and honestly, it’s hard not to eat straight from the bowl. Or you can use a good quality store-bought pesto! Perfect for busy evenings or even as a pasta salad the next day for a casual lunch al fresco (if you work from home just have it on a sunny patio or balcony, but hold back on the rose 🍷 until after 5PM 😜).

My pesto and ricotta pasta is creamy, zingy, and loaded with lemony rocket and walnuts. A five-minute pesto, a swoop of ricotta, and dinner is done in 20!
I should have started with breakfast, but hey-ho: this one’s simple but bold. A slice of toasted sourdough, topped with goats cheese, charred red salad onions, a sprinkle of sumac, and plenty of good olive oil. It’s savory, tangy, creamy, and smoky – basically, it packs way more punch than it has any right to at 8 a.m.
