We’re in the thick of summer now: the garden’s bursting (we had a little rain), the evenings are long, and I’m leaning hard into meals that feel a bit indulgent but still squeeze in more plants for your gut.

It's not easy to decide what to make for dinner in the summer, but don't overthink it! Here are three dishes I’ve been making (and remaking) lately — all taste-tested, tweaked, and 100% staying on rotation.
🫑🌶️Creamy Roasted Pepper SaladThis one took a few rounds to get just right, but I’m so glad I stuck with it. Grilled red peppers blitzed into a creamy ricotta sauce, then tossed with pasta, olives, sun-dried tomatoes, chorizo, pine nuts and a handful of basil. Feels like a little Mediterranean holiday on a plate and on the table in 45 minutes.
🧀 Pea & Courgette Soup (with Naughty Crisps) If you're the type who still fancies soup in summer (I know I do 😉)— this one’s for you. It’s sweet, light, and fresh, and the parmesan crisps are totally extra, but so worth. There's a video too, if you want to see how I serve it up.
🥔 Smashed Potato Summer Salad Think warm, golden smashed potatoes, roasted English cherry tomatoes, creamy feta melting over everything, and a garlicky luscious dressing that’s almost drinkable. Every week I make a version of this salad and I think you should save this one for those cool summer evenings on the patio, maybe with a glass of something chilled!
