Pineapple takeover

If you know me, the grill is more of a habit than ambition. On a Wednesday, there are courgettes and pepper planks, pineapple spears, whatever's in the fridge that'll take some char. But I'm properly gearing up for it now: we're hosting a family and friends BBQ soon, and I keep coming back to this Al Pastor slow cooker recipe as the answer to the bit I always dread, standing over the grill while everyone else is on their second drink.

Get the joint prepped and into the slow cooker ahead of time, then all it needs is a slow finish on the grill while your guests are already settled in the sun with a drink in hand. Minimal standing over the BBQ required, and everyone eats at the same time.

Avocado Pineapple Salsa​
Pineapple and this go hand in hand, so the avocado pineapple salsa is the obvious pairing. Sweet, a bit of sharpness against the richness of the pork, and it comes together while the pork is getting juicy on the grill. Good for the gut too, avocado and pineapple both pull their weight on the plant count.

The Other Fruit-and-Savory Combo On Rotation

Grilled Apricot & Burrata Salad

I'm planning on making this on repeat: grilled apricots, burrata, and butterhead lettuce, with basil, mint, a balsamic drizzle, and something crunchy on top (crispy onions for me). Oh, and grilled peaches would go too if you don't have fresh apricots around.

Ready in 10 minutes

  • 6 apricots, halved and grilled
  • 1 ball burrata, patted dry
  • 1 head butterhead lettuce (or any salad leaves)
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • Β½ tsp sea salt
  • A handful of fresh basil and mint, torn
  • Balsamic glaze, to finish
  • Crispy onions or a topper of your choice

Grill the apricot halves until they've got some color and softened slightly. Whisk the olive oil, balsamic vinegar, and salt for the dressing. Layer the lettuce, tear the burrata over the top, add the grilled apricots, scatter the herbs, drizzle with the dressing and balsamic glaze, and finish with the crispy onions.
