I've been craving my Butternut Squash Chicken Soup all week. It is exactly the sort of thing I want to reset: sweet roasted squash, soft onion, a little garlic, stock, simmered together into a golden, silky bowl, topped with crispy chicken and alive with zingy lime zest.
You can keep it really flexible too:
- Use leftover roast chicken (even turkey) if you have some.
- Skip the chicken and use veggie stock if you prefer a meat-free bowl.
- Don't skip those black beans with a kick!

A bit of gut love
The butternut squash, onions and the beans you you add on top bring fibre to keep your good gut microbes nicely fed, while a warm, home cooked soup is an easy way to sneak in a few more plants without overthinking it.
🫘Did you know those glossy black beans on top are also rich in polyphenol antioxidants (including the dark pigments called anthocyanins), which help mop up free radicals while also feeding the beneficial microbes in your gut? (Apologies for the nerdy detour, I promise it still just tastes like really good soup.)
This is the kind of soup that feels like it is looking after you, without turning into a full “cleanse”. Just simple, homemade, and very dunkable with a slice of bread.
