This Is Why I Bake

Worth Every Hour

I only had four small slices left in the freezer, tucked away in a wax bag, when our son turned up unexpectedly for a brief visit. He inhaled all four before I could barely offer him a plate.

It feels lucky, having something that takes most of a day to make and is still worth sharing with the people you love the moment they walk through the door. That's why bread will always be the one thing that excites me most in the kitchen.

This is a blueberry sourdough boule with a tangzhong worked into the dough, which is simply a cooked flour and milk paste that keeps it soft for days.

Worth Making This Week

Dinner: Salmon Pea Pasta
Salmon, sweet peas, and a creamy pesto sauce, on the table in under 30 minutes. It feels like a lovely dinner out, but still comes together on a weeknight.

Breakfast: Moroccan Shakshuka
Cannellini beans bloomed in olive oil until creamy, cherry tomatoes, roasted peppers, and a good spoon of rose harissa pesto, with eggs gently poached right on top. A lazy weekend breakfast, though it works just as well as a one-pan dinner.

Lunch: Ancient Grain Salad
Quinoa, lentils, roasted peppers, and feta, sweet pomegranate jewels scattered through, salty, sweet, creamy and crunchy. Good for meal prep, good for a packed lunch, and so good for your gut bacteria.

See you next week!
