A slow dinner worth stirring

I love this kind of meal for a relaxed evening at home, when I’m not trying to rush dinner onto the table in 15 minutes. There is something so satisfying about stirring risotto, letting everything soften, and ending up with a pan of something silky and comforting. It feels like the kind of dinner that turns an ordinary evening into a lovely one.

My chicken and leek risotto is creamy, cozy, and topped with golden lemon pepper chicken. The leeks and mushrooms make it feel hearty and full of goodness, but it still has that slightly special, weekend-dinner feel.

This is the kind of recipe I make when I want proper comfort and don’t mind a little stirring at the stove. Whether you’re sharing it with someone or just making yourself a lovely plate of food, it is such a good one for this time of year, when leeks are still just about in season.
